Replacing carbs in Diet LOL @ bread and milk being crap. Anyways.. Op if you want to lose weight ( probably body fat). Find daily maintenance calories, create a deficit. Either through the use of diet and or exercise. Adjust calories on a weekly basis, repeat till desired body fat % is reached.
