I eat tons of chicken and rice, in fact I am always defrosting chicken. I usually do some kind of stir fry, chicken with greens in coconut oil with some basmatti rice, sometimes I have the same meal 4 times per day. I guess I am appealing to any chefs out there to try and make a simple tasting thai chicken type recipe. I am thinking coconut milk and lime,but how would you add them to stir fry chicken? It can be really simple tasting as I don't mind things tasting fresh and simple, just a bit stuck. Cheers guys.

Thai chicken curry for thai curry you need to make a paste.. you need some oil, either green or red chilies, some lemon grass, some garlic... there are other optional ingredients but these are the main part of it. infuse the above in a blender to make your paste... fry your chicken in a pan with a touch of oil (i use sesame) until its browned sightly, then put it on a plate and stand to one side. heat a table spoon of oil in the pan, add a good blob of paste and stir fry for a minute, then add a can/carton of coconut milk, stir it all together and then simmer gently.. add the chicken and simmer for about ten to fifteen minutes. serve with basmati rice. or you can buy a jar of paste at tesco like i do these days as it saves a load of fcuking about
Thai chicken curry one point to make though, there is a flaw in the recipe, she says put the chorizo in with the chicken, but dont, unless you like eating coal, put it in about 20 minutes before you get it out
Thai chicken curry I like your paste idea mate, defo as I could use a lot of it, freeze some ready meals, I suppose that is why I am looking at using fresh as I can mass produce and freeze. Cheers dude.
